Last week Xaver and I sat down and tried to figure outways to simplify our life and get on a better path nutritionally. It's hard to eat rightwhen you don't have the right foods in the fridge and you're constantly asking “what's for dinner” at 7pm every night. We created a menu plan with a matching shopping list to cut our decision fatigue with dinner time and to help us grocery shop easier. This menu repeats every two weeks, with one night set aside for trying new recipes. We built the menu around foods we really love, including our go-to take out meals, like Thai Peanut Chicken Curry. Doesn't that look delish? We actually had this dish for dinner again this week and the kids remarked that it tasted better than the Thai takeout restaurant! The secret is the Jif™ Peanut Powder. Okay, so enough about smoothies. What we really want to share is our recipe for Thai Peanut Chicken Curry. I shared a teaser image of this dish over the weekend and everyone was asking for the recipe from Facebook to Instagram and even on Snapchat! So I hope you all love it as much as we do. You can add more vegetables to it or make it vegan by using peanut oil instead of butter and potatoes or carrots instead of chicken.

The key ingredient to the flavorful and easy curry is Jif Peanut Powder. We stopped by Walmart to pick up the Jif Peanut Powder and all the other ingredients for the curry. Find the Jif Peanut Powder in the Peanut Butter aisle, naturally!

Shopping list:

  • Jif Peanut Powder
  • 2 pounds of chicken
  • Ground black pepper, curry powder, chili powder, salt
  • 2 fresh garlic cloves
  • About 1″ of fresh ginger root
  • 1 medium white or yellow onion
  • 3 bell peppers – choose 3 different colored peppers for more interest
  • 1 can (12 oz) of coconut milk
  • white rice
  • red chili flake (if you like your curry spicy)

Chop the chicken into cubes.Chop the onions and bell peppers into bite sized chunks.

Peel the ginger root to expose the insides. Grate the ginger on a grater, like this horseradish grater I got at a culinary store. If you don't have a grater, finely chop the ginger root.

Crush and mince the garlic cloves.

Heat the butter or ghee in the pan on medium heat until hot. Add the chicken and cook thoroughly.

Remove the chicken from the pan. Add the ginger and garlic to the drippings in the pan. Stir to loosen the drippings from the pan.

Add the vegetables and cook until the onions are translucent.

Return the cooked chicken to the pan.

Add the coconut milk. Stir

Add the spices. Stir.

Add the Jif Peanut Powder and mix thoroughly. The Jif Peanut Powder will cause the sauce to thicken right away. Continue cooking for about ten minutes to infuse the peanut flavor into all of the ingredients.

Add red chili flake if you like your curryextra spicy!Spoon the chicken curry over a bed of rice. Garnish with sliced scallions and chopped peanuts (if desired).

Ingredients

  • 6 TBSP Jif Peanut Powder
  • 1 TBSP Butter or Ghee
  • 2 TBSP Curry Powder
  • 1 tsp Chili Powder
  • 1 tsp Ground Black Pepper
  • 2 tsp Salt
  • 2 Cloves Garlic, Minced
  • 1.5 tsp Fresh Grated Ginger
  • 112oz. can of Coconut Milk
  • 1 Medium Onion, Chopped
  • 3 Bell Peppers, Chopped (yellow, green, red)
  • 2 lbs Boneless Skinless Chicken Breasts, Cubed
  • 2 Scallions, chopped on the diagonal for garnish
  • 2 cups of uncooked rice (cook to make 4 cups)

Instructions

  1. 1. Heat butter in pan. Add chicken.
  2. 2. Cook the chicken on medium heat, stirring to prevent burning or sticking.
  3. 3. Remove the chicken from the pan.
  4. 4. Add garlic and ginger to the pan on medium heat. Scrape the pan to loosen chicken drippings.
  5. 5. Add onions and peppers. Cook until the onions are translucent.
  6. 6. Add cooked chicken to the pan and mix.
  7. 7. Add coconut milk. Stir to mix.
  8. 8. Add remaining spices. Stir until mixed.
  9. 9. Add Jif Peanut Powder. Stir until mixed.
  10. 10. Continue to cook on low heat for about ten minutes to infuse the vegetables and chicken with flavor.
  11. 11. Serve over rice.
